How a mushroom is grown
Cultivation follows a chain. A living culture (a liquid culture syringe, or a slant of pure mycelium on agar) is used to inoculate sterilised grain. Once the mycelium has run through the jar you have colonised grain spawn, which is mixed into a bulk substrate of coir, hardwood or composted manure. The mycelium spreads through that substrate, and when it is fully colonised a change in conditions triggers it to fruit.
Two ways in
You do not have to start at the beginning. An all-in-one grow kit ships ready to inoculate, so a first grow can be fruiting on a windowsill within weeks with no sterile work at all. That is the easy end of the spectrum, from PF-Tek jars up to a monotub. Working from a culture through your own spawn and substrate is the advanced end: more control, more strains, more that can go wrong, and the part that needs a clean workspace and good technique.
